Top 8 Free Cookies

2/3 cup sugar
1/3 cup brown sugar
3/4 cup softened Mothers Margarine (no soy or dairy derivatives)
2 tbsp vanilla extract
4 tbsp water
Blend in mixer until creamy

In a separate bowl, combine:
1 1/2 cups sorghum flour (since it is grainy, sift it)
1 cup tapioca flour
1/2 tsp xanthum gum
2 tbsp egg replacer
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Stir and add to wet ingredients, then add cup of Enjoy Life allergen free chocolate chips (they have no dairy,soy or nut)
You may need to add water by the tbsp if it is too dry.
Bake at 375 degrees for 11 minutes.  Makes about 4-5 dozen.

Tip:  I use parchment paper to put my cookies on for easy cleanup.
