Lemon cookies
2 sticks dairy free margarine
5 tbs.sugar
2 1/2c.flour
zest of 1 lemon
Cream margarine and sugar,add lemon zest and flour.Knead it to a hard dough.Form dough into 2inch balls and flatten slightly,place them on an ungreased cookie sheet,bake in 350 deg.oven for 15-20 min.
