Vanilla Soy Ice Cream
2 cups soy milk
2/3 cup sugar
2 tbs. corn starch
1 tsp. vanilla extract
Mix together sugar and corn starch well and pour it in a small saucepan,add soy milk and stirring constantly bring it to a boil,add vanilla extract,turn off the heat.After cooling for 30 minutes,you can freeze this in a container for about 4 hours before eating.This mixture also works well for ice cream makers.

Hi, Thanks Melek! I made the Vanilla Soy Ice cream recipe. My daughter proclaimed it to be "yummy, yummy, yummy!" It's a great recipe. I made it again and added about 1/2 cup of Amanda's Own chocolate chips. I melted them into the mixture while it was still a bit warm and it turned out very rich and delicious. (I love Amanda's Own Chocolates by the way - the little bunny and chocolates I bought are so adorable!) Looking forward to seeing everyone at the next meeting. Cheers, Allison
