Oat, Rice, Soy or Dairy Ice Cream

2 1/2 cups of your choice of milk (oat, rice, soy or cow) 
1/2 cup cold safflower oil (for convenience, I always leave a
sealed cup in the fridge)
3/4 cup sugar
2 tsp vanilla extract
1/4 tsp salt
1/4 tsp soy lecithin (generally safe for soy allergic)
1 tsp xanthan gum

If you want chocolate ice cream, just add 1/4 -1/2 cup safe cocoa to the mix.

Combine all ingredients and blend on high for 3 minutes, then transfer to ice cream maker.
